Honey from bees is a sweet substance like syrup. It is made from flower nectar, which the honey bee processes in its goiter. This food product contains: water (13-20%); carbohydrates in the form of glucose (75-80%), fructose and sucrose; various vitamins; folic acid.

Honey is used both as a food product and as a folk remedy for various ailments. In this regard, there have been many statements about this delicacy that contain information that does not always have a true meaning.

You can check if there is flour or starch in honey by dropping iodine on it - then the honey will turn blue. So it is, of course, so, but only starch in honey can still be present, since the bees themselves sometimes bring it there. There is a more correct way to check the quality of honey - to ask the seller to show the quality certificate issued by a special laboratory. This certificate contains information on the diastase number (an enzyme secreted by bees to break down starch). So, for example, for spring honey the diastase number should be at least 13, for acacia honey - at least 7, for buckwheat honey - at least 24-39. In addition, moisture is one of the main quality indicators of this product. In high-quality honey, as a rule, humidity does not exceed 21%. It is best to buy May honey. In most cases, old honey can be passed off as May honey, which is preheated so that it becomes transparent and looks like fresh. In this case, such honey already loses all its beneficial properties and such a harmful substance as the carcinogen methylfurfural is formed in it. To be convinced of the quality of honey, you can look at the quality certificate of the seller of this product - if the diastase number is indicated in it, which is less than it is generally believed, then they want to sell you heated old honey. Also, honey freshly picked by bees is sometimes given for May honey, but not from spring flowers, but from sugar syrup specially prepared for this purpose. And, of course, it's not even worth talking about the benefits of such honey.

Honey, unlike sugar, contains very few calories. 100 grams of honey contains 330 calories, while 100 grams of sugar contains 390. Among other things, honey is an excellent source of energy for the human body.

Factory-made honey is not natural. The honey produced in factories is usually very liquid and transparent, but this does not mean that it is not natural. It's all about special filters, whose task is to delay the germ crystals - the reasons for the crystallization of honey. Honey is passed through these filters and, as a result, it can be stored in liquid form for a long time.

Drinking tea with honey is very healthy. Undoubtedly! However, at 50-60 degrees of water, honey loses all its medicinal properties, so it is better not to let it into tea, but to eat it. And besides, honey, diluted in tea, is poorly absorbed, so it is recommended to put it on the tongue right away and drink it with boiled water.

The candied type of honey indicates that it is already old and no longer has medicinal properties. Not entirely true statement. In reality, honey has unlimited shelf life and therefore never spoils. By the way, honey was found in the graves of the Egyptian pharaohs, which has retained its valuable properties to this day and was completely edible. As for the quality of candied honey, it remains unchanged, only the appearance of the product changes - from liquid and light yellow it forms into solid and takes on a dark brown color. Also, natural (quality) honey is candied, as a rule, after a few months.

Honey is especially beneficial when harvested from a single plant. Controversial statement. Nowadays, it is very rare for beekeepers to get honey from one plant. If earlier all kinds of weeds were destroyed, now bees have a place to roam. For example, collecting honey from a linden tree, bees simultaneously sit down on cornflowers, rape, etc. The result is assorted honey, which is called, for example, linden with herbs. Besides, each bee colony gives out "its own" honey, so even if honey is collected from one plant, but by different bee colonies, it will be different. Therefore, even if honey is collected from different plants, it will not lose its beneficial qualities.

Honey is only needed to sweat during illness. This is a deep misconception. Since ancient times, honey has been considered a means that is capable of: preserving youth, strengthening health, well, and among other things, delivering pleasure in the form of a delicious delicacy.

Honey is the strongest allergen. In some cases, honey may indeed be poorly tolerated by some people. But if consumed in moderation, there will be no signs of allergy.
